Pumpkin Pound Cake
Ingredients
1/2 cup butter
2/3 cup brown sugar
1/2 cup sugar
1 cup canned pumpkin
2 eggs
1 tsp. vanilla extract
1-1/2 cups flour
1-1/2 tsp. pumpkin pie spice
1 tsp. baking powder
1/2 tsp. baking soda
Directions
Prep time: 15 minutes
Cook time: 45 minutes
Preheat oven to 350°F. Beat butter and sugars until light and fluffy. Add pumpkin, eggs and vanilla; stir well. In a small bowl, stir together dry ingredients; add to pumpkin mixture and mix well. Pour into a greased loaf pan and bake for about 45 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.
Makes 8 servings.
I made this and it is fabulously moist. You can add some chocolate chips, butterscotch morsels, or nuts. Also dust with powdered sugar or frost with orange or rum glaze or even cream cheese frosting! ENJOY

Thank you Joane. That does sound yummy.
Another question for you Joane Pumpkin pie spice.. I don't think I have seen that here. We have mixed spice, I guess it would be similar |

Joane, I love pound cakes...almost any kind! Thank you for sharing and I do plan to bake one for Thanksgiving.

1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
What I buy is already made up but you can make it yourself Sheryl. Also, our powdered sugar is like your frosting/icing sugar. |

Yes Celeste. I used the light brown sugar and THAT is the secret ingredient! This cake literally melts in your mouth. I put mine in a tube pan instead of a loaf pan. It baked faster that way.
