Bagna Cauda Anyone?

Linda got me thinking of some Christmas snacks. Many of our friends up north loved this Italian "hot bath" dip. It sounds awful, but it is so very good. You just have to like garlic and not mind the smell that lingers!


1/2 lb butter (2 sticks)
1/2 cup of good olive oil
12 or more garlic cloves, crush some, leave some whole
1/2 teaspoon of freshly cracked black pepper

1 small jar of anchovies in oil (may also use tinned variety)
Salt or Parmesan cheese, to taste (optional)
(When almost done, many put about a 1/2 pint of cream in to cut the garlic)
Heat butter, olive oil, and crushed black pepper in a skillet or sauce pan over low heat. Add garlic and anchovies (oil and all) and mash to a paste with a fork as they become tender or leave the garlic whole if you prefer.
For dunking try some raw or broiled broccoli , Celery, Bok Choy leaves, Cauliflower etc.
Breadsticks ( wrapped with prosciutto ) or good old crusty Italian bread is great and is a good "napkin" since it is messy.
