1 1/4 Cups all purpose flour
1/2 cup granulated sugar
1/2 tsp cinnamon
1/2 cup chilled, unsalted butter
1 egg, separated
1/2 cup, sliced, unblanched almonds
Line a 13x9x2 inch pan with foil. Grease foil. Mix flour, 1/4 cup sugar and butter with fingertips until crumbly. Mix in egg yolk until evenly blended. Press firmly into pan. Brush with slightly beaten egg white. Sprinkle with remaining sugar and almonds, pressing into the dough. Bake at 350 degrees for 18 to 20 minutes, until lightly browned. Cool slightly and lift out of pan by foil onto a cutting board. Cut into squares and store tightly covered for several days to blend flavors.
I have to tell you once these are cooled they hardly make it to be stored several days to blend the flavors! I sometimes add cinnamon to the sugar I sprinle on top to - I love cinnamon. These are one of my special Christmas cookies.
